Why can't Bitcoin be hacked from cold wallets?

Probably a noob question. I understand that it's not connected to the internet. But based on what I've learned, bitcoin doesn't actually go onto the wallet. Only your private keys do. So if the actual bitcoin is still on the blockchain, couldn't hackers still get to it?
